Gotta love the Christmas Work Parties!

Last Friday night, I was Josh's date to his work Christmas party. As you can see above, we were quite the minority. It was actually very fun...lots of great gift giveaways...two 42" flat screen, some wii's, rockbands, giftcards, gift baskets, a flip camera, and lots more. It was hilarious to see some of the people run up to get their gifts...you would have thought they hit the lotto!!!! They were SO happy...and some even attempted to pull out some serious dance moves while walking up to rectreive their prize...at one point I thought that maybe one of the ladies boob was going to come out and say hello to all 300 of her onlookers...but thank goodness it didn't and thank goodness the lights were dim.
Josh was one of the MC's and if any of you know him...he is TOTALLY in his element when he's got a mic. in his hand. You will see what I mean in just one second...but before I get into detail...below is an attempt to take a picture...however the first try Josh's watch snagged on my new little fake fur coat I got (which as you can see I wasn't too happy about...)
second attempt worked out a little better.
on to the entertainment...while in the middle of raffling off some prizes...the DJ in the back mistakenly started playing vanilla ice..."ICE ICE BABY...dun dun dun dun dada dun dun..." I of course was sitting in a seat off to the side (considering I am new at this and didn't know anyone there...so while he was up entertaining I was merely an audience member doing what I do best= people watching) anyways the beat came on and IMMEDIATELY I KNEW what was going to happen. JOSH LOVES THIS SONG. HE KNOWS EVERY WORD. YES...EVERY WORD. Suddenly his eyes light up...he starts getting a little jive in his step...and the words
"ALRIGHT STOP COLLABORATE AND LISTEN...ICE IS BACK WITH MY BRAND NEW INVENTION" explode from his mouth and into the microphone. Suddenly the crowd starts screaming...yelling...standing...cheering...dancing...getting up on their seats clapping...I sit in horror/awe/admiration/embarrassment (YES all these things I was feeling) suddenly I just start laughing. No way my husband is full on performing ICE ICE BABY at his first work party. Then I realize OH YES HE IS...and the crowd went wild.
Can you see it coming...the dance moves and slightly construed lyrics...he got most of it right.
and now the part where he pointed to his audience to sing the part we all know so well "ICE ICE BABY" and let me tell you...they all screamed it over and over!

The song ended...and suddenly Josh snapped out of his trance and went back to the raffle. Unforgettable I tell you.
I didn't know if I wanted to crawl under my seat or stand up on my chair screaming "thats my husband up there..."while kicking off my heels and taking my hair down while rocking out to his "performance".
So I opted to do neither. Instead I took a picture of the excited audience.

I love me some mexican!

I am a sucker for mexican food. I'll take it any day...every day.
So naturally I make a lot of mexican-ish dinners...(i.e. tacos, mexican casseroles, taco salads, fajitas, crock pot burritos, enchilada soup...) you get my drift. Well I came upon this little recipe called Tamale Pie Casserole (now before you get all judgmental about the name TAMALE PIE...just trust me...its good!) and I really did LOVE it. Plus it makes excellent left overs. I had it for lunch for two days straight. YUM. So instead of using ground beef...I used a rotisserie chicken from Costco that I needed to use before it went bad...and I think that is what made it SO good!
For 4.99 those chickens can't be beat I tell ya!

Here is MY edited version of Tamale Pie Casserole:

1 can creamed corn
1 12-16 oz. slightly thawed frozen corn
1 tsp. cumin
1 tsp. garlic powder
1 cup salsa
1 small can tomato sauce
1-2 chopped onions (i used one)
1/2 tsp salt
corn tortillas (about 12-15)
1 rotisserie chicken
Cheddar and Monterrey cheese (goes on top...so put as much as youd like!)
1 big tomato

directions:
saute onions and chicken until nice and juicy. Add corns, spices, salt, salsa, tomato sauce and simmer for about 10 minutes. Take a greased 9x13 pan and put 1/3 of sauce on bottom. Then layer a few tortillas on top. Pour 1/2 of the rest of the sauce on top of that. Again, layer a few tortillas until well covered, then layer the last bit of the sauce on top. Then take the big tomato...cut in slices and place on top like pepperonis...Sprinkle some of that cheese on the top. Cover with foil.
Cook for 30-35 minutes. Serve with Sour cream, tortilla chips and a hungry Tumm-ay!!!

p.s. yum.you can thank me later. :-)

It's Raining Confetti...

video

so it was Whitters b-day November 25th...
so to celebrate...what better way then a nice pedicure?!?!
So we all went and got our toesies done...
little did whitney know that while she was getting her leg rub the little asian woman ran out to her car and SECRETLY came in with this hefty... FULLY loaded rocket contraption that she got in china town...
NO JOKE this thing was about 5 feet long...FULL of confetti and streamers.
Whit had NO idea and suddenly I bust out my camera...the asian gal Blasted off her confetti rocket from behind the wall (which i was so mad about b/c i totally missed it on camera...she was a little too excited to pull the trigger she didn't give me time to start the video!!!) and we all (all=me and paige) sang Happy Birthday...it was like something out of a movie. I was DYING. Whitney HATES attention like this...so it made it that much better!!! Gotta love it!!!

p.s. don't ask why the lady had a five foot rocket full of confetti just stashed in her little saturn?!?!? People are so random sometimes.

who would have thought...

that these peeps would be millionaires by their early 20's...um REALLY...?!?! As much as I enjoy Twilight...never in a million years would I have picked Robert Pattinson to play the to die for heart throb Edward Cullen. But he actually pulls it off in the movies...now his agent needs to help him work the camera off screen...and I mean pronto...b/c he always looks slightly disoriented/a bit loopy in his day to day pictures...would you agree?

#30 is the last...Can you beleive this month has already passed?!?!

Well my friends November is over. Never again will we celebrate Thanksgiving in 2009 so I hope it was a good one! Mine sure was. Even though we missed out on being with the Jergensen's who all flew to Florida to spend the holiday, (which Im not gonna lie, I was sad to not join the troops over there...but Josh had to work and I didn't want to leave him here) so we enjoyed Turkey day with my family. Everyone was home...all five sisters...the two little chicks (Huds and Reaggies) and the greatest host and hostess in the history of mankind (mom and dad)...the food was wonderful, the weather was great, and the company was the best part.
The last thankful post on my list goes out to my hermanas. All five of us are so different in so many ways both looks wise and personality wise but we all mesh quite well... :-)
here are some examples...

Overall:
Has always been very mature for her age. Loves photography and is such a wonderful mother. She has always been so nurturing and thoughtful. She has very rich taste (never a bad thing haha) and has always been someone I really do look up to. She is truly such a genuine and sincere person...and any of her friends would say the same!
A total people pleaser.

Overall:
Growing up, Paige and I were always with eachother. She was my little side kick. Whatever I would say...she would do.Now a days she's a bit smarter then that haha. Anything Paige puts her mind to...she will do it. She is hilarious, loving, and when she hugs you...you can really feel that she means it. She doesn't like fake, she is honest...what you see is what you get.
Rachael:

Overall:
my parents always called her the social butterfly...she loves being out and about with friends, very reliable and ambitious (she is even selling her photography on greeting cards in packs of 10 at a local coffee shop...),artistic and somewhat of a free spirit. I always love being around rachy...if she isn't hungry. (but that is something we all have in common)
Saders:

favorite food: Loves Hannah Sushi (Japanese restaurant)
hobbies:

Overall:
Sadie is the only sister, that I actually remember as a baby, since we are eight years apart I can really recall her being all ages up until now...and I can honestly say she has become such a beautiful young woman. She is so smart, such a loyal friend...and is the only sister that LOVES and I mean LOVES dogs. She is the best baby sister I could ask for.

I know this was a long post, but its good to keep for memory sake. Growing up with all sisters has been such blessing in my life. Each one brings so much joy and so much meaning into my life...each one has a special place in my heart and i love them dearly. I am so grateful for them.

#27...Thankful for the...SUN

Not a day goes by, when the sun is out, that I am not thankful for it.
It makes everything so much "brighter".
I remember when I was up at school, during the winter, and it would snow for about 4 months out of the year, cold and dreary...as soon as April-ish came around...and the sun peeped through the clouds, and the first little sprout of grass popped up...people were beyond Happy.
There is just something about the sun that just brings happiness.
